It is never easy to define a kitchen,  one’s own kitchen.  Because it is the result of a complex history and many stories that are intertwined and continue to do so.

And the family memory, the delicious dishes of the grandmother, the delicacies of her mother, aunts loving; is sedimentation of past experiences, memories of trips, suggestions, even falling in love.  Of childhood memories, in Palermo, a city of deep popular and aristocratic gastronomic culture, new experiences, as an adult, in Bagheria, the cradle of rich maritime culinary traditions and country.  All this, then, was filtered from personal feeling, the emotions of life, from growing and maturing, from new knowledge, even daily, of men and things.

Well, perhaps, if I were to just give a definition of this kitchen, I would say, simply, that it is the kitchen of Tony Lo Coco, open, passionate, careful, organised.  With the only ambition to give the guests moments of well-being and happiness.
