From its privileged position at the crossroads of different culinary cultures, Sicily is no stranger to the phenomenon of fusion cuisine.  The nobility of the island has a great tradition of fine chefs; its convents and its bakeries have baked exquisite delicacies for centuries, while the sea and its fertile land offer great products.

Our chefs have been able to represent the authentic modern Mediterranean cuisine: exceptional products, local dishes revised with sensitivity and superior technique, culture of acceptance and service, no indulgence to ephemeral fashions of taste and catering.

They managed to create a Sicilian cuisine respectful of tradition, but not bound to it.  They kept the original spirit of opulence without trespassing into excess.
