Research and creativity come together in the kitchen; thanks to the skills of the chef and the professionalism of our highly qualified staff, traditional dishes are reinvented with great liveliness thanks to the brio of Salvatore Ficarra, who takes inspiration from the local cuisine and in particular from the recipes of Sicily’s peasant culture. The freshness of our ingredients, together with great care in the combinations of flavors and fragrances, make each dish a delicacy, a perfect balance of taste and sensitivity, memory and innovation.

To create the menu, which changes throughout the year, chef Salvatore Ficarra uses only ingredients of the season to create his dishes. This ensures they are at their best, with processing reduced to a minimum. He just has to add the final touch of aroma and colour, the latter being a very important feature for the chromatic harmony of the dish.
